Today was a wonderfully royal day in Britain as we celebrated the wedding of Prince William and Meghan Markle. I’m a huge fan of the royal family and I’m a sucker for weddings so I was excited to settle in front of my TV this morning. And what’s a better way to celebrate a royal wedding than a quintessentially British picnic? As a keen baker I decided to test my skills and bake some fresh, gluten free scones, because no afternoon tea is complete without them! I had such a fun time welling up at Meghan’s beautiful dress, Harry’s reaction, and of course the adorable bridesmaids and page boys so I thought I’d share all the food myself and my enjoyed today. I couldn’t share this without my scone recipe too (because gluten free is so hard and we all need a helping hand sometimes!).
My Royal Wedding Picnic
So as you can probably see, we’re a little extra in our household. So of course we have a savoury and sweet selection for our picnic! We started with some slices of mini pizza, a cheese selection, crunchy crisps, and my personal favourite, cocktail sausages. We even cooked some of our own quiches with some gluten free mini quiche cases, which put a fun spin on one of my favourite picnic foods. This was all washed down with some M&S raspberry lemonade.
Now, here comes my favourite bit. I’m normally a savoury girl but I can never turn down a cream tea and as they were homemade it was certainly the star of our royal picnic. These gluten free scones were baked to perfection (if I must say so myself!) and were covered in huge dollops of strawberry jam and clotted cream. Mine was served the Cornish way – jam on the bottom and cream on top. For those of you who aren’t British, we have an ongoing feud between the Devon and Cornish tea, where the former puts the cream on first and the latter the jam. Unfortunately I betray my own county, sorry Devon! We also enjoyed some tiny macarons as a little extra.
No British occasion would be compete without some OTT decorations so we opted for Union Jack flags and paper face cut outs of Prince Harry and Megan!
Fail Proof Gluten Free Scones Recipe
It’s time for my fail proof gluten free scones recipe! If you’re gluten free or know someone who is, you probably know how difficult it can be to bake without wheat. Cakes can taste funny, fall apart, or just fail catastrophically. This recipe, however, is guaranteed to produce delicious, crumbly scones every time and the only special ingredient you’ll need is gluten free flour!
- 250g (8oz) gluten-free self-raising flour
- 1 level tsp gluten-free baking powder
- 50g (1¾ oz) butter
- 50g (1¾ oz) caster sugar
- 1 medium egg
- 150ml (¼ pint) milk
- Beaten egg, to glaze
- 1-2tbsp granulated sugar, for sprinkling
- Pre-heat the oven to gas mark 7 and line a tray with baking paper
- Place the flour, baking powder, and butter into a bowl and rub together until the mixture resembles fine bread crumbs
- Stir in the sugar
- Lightly beat together the egg and milk
- Add the beaten egg and milk to the flour mixture and beat until you have a smooth consistency (I found a baking spatula worked best)
- Divide the mixture into 8 balls, gently roll and place on a sheet of baking paper
(the gluten free mix is too sticky to shape with a cutter so use your hands and work quickly)
- Brush the top of the scones with an egg wash (beaten egg) and sprinkle with sugar
- Bake for 15 minutes and remove when the tops are golden brown and crunchy
- Enjoy with jam and cream!
And it’s really that easy! This recipe makes scrumptious scones and is so easy, you’ll be making your own afternoon tea every weekend once you’ve tried them.
